Hello again. It’s been, what? Almost a year? I wish I had an excuse like it was 2017 and the world was going insane, but really, I have none. I was a bumstress.
S.O. (significant other) and I recently finished watching Master of None season two on Netflix. My respect for Aziz Ansari has gone up so much because of it. He made some interesting creative choices and did such a beautiful homage to Italy and Italian films that all I can say is, Brava! As a minority in the same age range as his character Dev, it is the most relatable show I’ve ever watched. I wasn’t a big fan of Aziz before the show, but damn, did the show change my mind. Really, if you are curious or around your late 20s/early 30s or a minority or just unsure about life in general, I highly recommend it.
Isn’t this is a food blog? Sure is. Because of that particular season, S.O. and I have been obsessed with all things Italian. Hell, we even plan on going to Italy this summer. I don’t know how many caprese salads we’ve had since, and that’s okay because they are freaking delicious. Who knew such simple ingredients would make a taste bomb in your mouth? Oh yeah. The Italians.
These are the ingredients you need. You ready? You probably have at least 20 percent in your kitchen already.
- Fresh basil
- Extra virgin olive oil
- Pinch of sea salt
The instructions are even easier.
- Cut slices of tomatoes and mozzarella.
- Arrange how you like on plate. I like alternating in a line–tomato, mozarella, tomato, mozzarella.
- Cut basil. I like to chiffonade because it makes me feel fancy, but I’m sure you can easily tear it up as well.
- Sprinkle over tomatoes and mozzarella.
- Drizzle olive oil and sprinkle with sea salt
It’s simple and refreshing, and if you’re not much of a salad eater like myself, this will make you feel like a salad god/goddess.
